Bright colors make these eerie fingers lots of fun, and they’re tasty to boot, with almond paste–flavored dough coated in melted candy wafers and topped with a sliced almond.These tasty tender cookies look like fingers.
1 cup butter, softened
1 teaspoon almond extract
1 teaspoon vanilla extract
2 3/4 cups flour
1 teaspoon salt
2 tsp vegetable oil
1/2 cup sliced almonds
1 tube red decorator gel (optional)
Add butter and powdered sugar into a mixing bowl and beat until smooth. Beat in egg and lemon juice.
Sift together flour baking soda and salt and stir into mixture until combined. Cover and chill for 1 hour.
Preheat oven to 325F. Spray baking sheets with light coat of nonstick cooking spray.
Working with one quarter of the dough at a time and keeping remaining dough refrigerated, roll heaping teaspoonful (5 mL) of dough into finger shape for each cookie.
Press almond firmly into end for nail. Squeeze in centre to create knuckle shape.
Place about 1 in. apart on baking sheets. Bake 16 minutes or until lightly browned.
Let cool for 3 minutes. Lift up almond; squeeze red decorator gel onto nail bed and press almond back into place, so gel oozes out from underneath. Remove from baking sheets; let cool on racks. Repeat with remaining dough.
