Vegetable Cutlet Recipe

The best way to treat somebody if he/she is a vegetarian and that is vegetable cutlet. It is so simple to make it and it is very tasty.

Ingredients:

4-5 potatoes

1 onion

2 cup chopped mixed vegetables

beetroot

carrots

corn

green beans

green peas

1 cup bread crumbs

Fresh coriander leaves

2 tsp maida

1 tsp red chilli powder

1/4 garam masala powder

1/4 tsp turmeric powder

1/2 tsp cumin seeds

8-10 crushed cashewnuts

1 tsp chopped ginger

2 finely chopped green chilies

1 tsp lemon juice

Water- 1/2 cup

Salt to taste

Oil to fry

Method:

Boiled the potatoes very well, let the potatoes cool down. Peel the skin off and mash the boiled potatoes. Cut all the above said vegetables and boiled it in a pressure-cooker with little bit of water, turmeric powder & salt then Smash the mixture. Heat 2 tsp oil in a pan; add the cumin seeds and onion till it turns into brown. Then add green chillies, red chilli powder, turmeric powder and sauté for two minutes. Take mashed potatoes in a deep bowl.

Add vegetable mixture, crushed cashew nuts and refined flour two minutes. Then add

coriander leaves, salt and lemon juice and mix it. Divide the mixture into 12-15 equal parts, shape into a ball and roll over the rice flour and then cover it with rawa.

Heat the oil in a frying pan with a medium heat. Fry each cutlet until they are golden-brown on both sides. Drain and place on an absorbent paper. Serve hot with any chutney of your choice.
