Twisted Bread with Carom Seeds

Ajwain Bread is nothing but bread with twisted shape and spiced with Ajwain. Ajwain is an Indian spice used generally In Indian food, Indian flat bread and other Indian cuisines. It is a easy recipe which gives you a great aroma and ajwain flavor while baking. You can have this Ajwain Bread with tea or coffee. New Year and Christmas is coming, I think I’ll make something different as snack with tea or coffee.


1 cup flourbread2

2 tbsp cumin seeds

1 tbsp white sesame seeds

1 tbsp black sesame seeds

1 tbsp fresh yeast

2 tbsp olive oil

1 tbsp sugar

50 gms mozzarella cheese or processed cheese grated

1 tbsp rock salt

1/2 cup lukewarm water


Preheat oven at 200°C for ten minutes before baking.  Add yeast, sugar in luke warm water and stir it very well. Keep it in a humid place, add salt as taste. After 7 to 10 minutes yeast should be frothy and activated.

Take flour in a big vessel. Make a small well into it add all seeds and grated cheese along with rock salt. Mix the mixture very well. Add the yeast-water in the flour. Knead to soft dough. Add some olive oil. Use all your stamina to knead the dough.  Knead for 10 to 15 minutes. Shape into four balls.

Roll the ball with your hands into a rope shape. Dust some dry flour before giving shape. Now twist the rope with both your hands. Repeat the same process with the rest.

Place the twisted bread on the greased pan. Cover with a damp cloth. Keep in a humid place and at one inch distance form each other. Bake for 230°C for 10 minutes. Take a peek in the oven near the end, when the bread is nice and brown (the bottom too) its ready.

Let cool before slicing.
