Spicy deviled eggs, stuffed with mayo, mustard, cumin, and pickled jalapeños and topped with cilantro. Deviled eggs are quick and easy to make. You can spice these up with curry powder or chopped onion, a few jots of aji Amarillo sauce
6 boiled eggs
3 tablespoons mayonnaise
3 tablespoons aji Amarillo sauce
1 tablespoon chopped onion
Salt and black pepper to taste
Chopped red pepper and chopped green onion for garnish
Peel the eggs and carefully cut slice in half lengthwise. Scoop out the yolks and place them in a bowl.
Mash the yolks with a fork until smooth; stir in the mayonnaise. Mix onion, curry powder, and aji Amarillo sauce in it. Season with salt and pepper to taste. Spoon the yolk mixture into a heavy plastic bag; snip a corner off the bag to create a 1/2-inch opening. Pipe the yolks into the egg white halves. Garnish with chopped red pepper and green onion. Sprinkle with dried parsley flakes on top. Chill until ready to serve.
