Sitaphal Basundi an ultimate desert item from Maharashtra and Gujarat. It’s also extremely simple to make. Milk 1 1/2 liter
Sugar 1/2 cup
Few strands of kesar
2 green cardamoms crushed
Fast we make the Basundi
Boil and reduce the 1 1/2 liter of milk, till you get a creamy thickness that coats the spoon. Reduced to 1/4 liter. Stop there. Add sugar and stir ill it dissolves. Set aside to cool.
Seed the sitaphal and keep the pulp in the refrigerator till needed. Mash the sitaphal pulp with a fork and add to the reduced milk and mix well. Add crushed cardamom and kesar threads in it. Serve chilled
It is often made on Hindu festivals such as Kali Chaudas and Bhaubeej (Bhai Dooj). You can garnish with slices of almonds and pistachios.
