Semolina Cookies are dry and crumbly cookie that you can take with your tea, coffee or hot cocoa.
This is so soft, melt-in-your-mouth biscuits are so easy to make. These cookies are very easy to make and stay fresh for several weeks when stored in an airtight container.
The cookies are also called as ghee cookies/biscuit suji and they can be prepared with or without the semolina.
Butter/Ghee – 1/2 cup
Semolina – 1/2 cup
Caster sugar – 1/4 cup
Glazed cherries- 12 numbers
Grease baking trays lightly with butter and preheat oven to 180°C.Place the baking paper in on baking tray.
Combine butter and sugar, beat well. Now add the flour and semolina in to the butter mixture.
Initially, it looks like bread crumble, but you can form a soft dough. Use your hand for making this.
Divide the dough into a big gooseberry size balls. Place them in baking paper by leaving an inch of space between them. Place the cherries on top of it.
Bake it for 15-20 minutes or until the cookies very slightly change in color. Let the cookies cool and harden.
Transfer to a wire rock and cool completely. Store in a air tight container. Serve the semolina cookies with a hot cup of tea or coffee.
