Pyaz ke Kachori

Pyaz ki kachori originated from Jodhpur.this spicy circular shaped fried dish is popular throughout Rajasthan and in fact the whole country.

Most of the citizen of Rajasthan starts their breakfast with the Kachoris, It’s not only famous among jodhpur people but appeal to the palate of the tourists.

It serves with chutney, but you can serve with Aloo ka ras.


For Kachauri:

2 Cups of All purpose Flour

3 tbsp of Ghee/clarified Butter

1 Tsp Salt

Warm water for dough

For Stuffing:

2 cups finely chopped Onions

1 tsp Kalonji (Nigella Seeds)

2 tsp Saunf (Fennel Seeds)

1 tsp corinder seed

1 tsp Garam Masala powder

2 tblsp Besan (Bengal Gram Flour)

2 Green chillies finely chopped

1 tsp red chilli powder

1 tsp roasted cumin seeds powder

1 tsp Dry mango powder/Amchoor


Take all purpose flour in a bowl and mix ghee. Mix it well with flour to make crumble dough.

Knead into a semi soft dough using water. Keep it for 5 7 minutes.Now for the onion filling heat oil in a pan.

Then add the kalonji, saunf, green chillies,corinder seed and onions and saute till the onions turn light brownin color.

Then add the besan, coriander powder, chilli powder, garam masala and salt and sauté for 2-3 minutes.

Add cumin seeds powder and dry mango powder and fry on a low flame for another one minute.

Then allow the mixture to cool completely. Then divide into 12 equal parts and keep aside. Now to make kachori roll out each portion of the dough into a 2 inch diameter circle.

Fill in the half tbsp of onion mixture in it cover it and flatten it again in a small size. Deep fry it in Ghee or refined as per your choice.

Fry them on a medium low else they will not be as crispy as they should be. Serve hot with Aloo ka ras.

Serve hot as a snack or break fast.
