This is a simple and delicious paneer recipe for all those who want to take proteins and vitamins. It is Cottage cheese and cashew nuts cooked into delicious gravy with fresh Indian spices. Paneer Pasanda is a type of paneer recipe that is popular in North India. As the name suggests “Pasanda” means every one’s favorite.
Cottage cheese (paneer) 400 grams
Cashew nuts 15-20
Grated Onion 6
Tomato 400 gms (pured)
Garlic, Ginger paste 2 tsp
Fresh coriander leaves a few sprigs
Kashmiri red chilies 5-6
Cumin seeds 1 teaspoon
Coriander seeds 1 tablespoon
Cinnamon 1 inch stick
Poppy seeds (khuskhus/posto) 1 tablespoon
Oil 3 tablespoons + to deep fry
Tomato puree 1 cup
Sugar 1 teaspoon
Salt to taste
Fresh cream 1/2 cup
First of all cut cottage cheese in small pieces. GrindCumin seeds, Coriander seeds, Cloves , Cinnamon, Poppy seeds, Coriander leaves, Kashmiri red chilies in to fine paste.
Now heat butter in a pan and fry onions till pink in color. In another side Heat sufficient oil in a kadai and deep-fry the cottage cheese cubes till light golden.
Drain onto an absorbent paper and set aside. Deep-fry cashew nuts in the same oil till light golden.

In the first pan when the onion get pink color add ginger ,garlic paste , the ground paste and tomato pure fry for four to five minutes till it emits a nice aroma or till oil leaves the masala.
Add sugar, salt and half cup of water and continue to simmer on low heat for ten to fifteen minutes or till gravy is thick.
Now add cottage cheese, salt, red chili powder, garam masala, dried pudina leaves, turmeric and mix well.
Add the fried cottage cheese and cashew nuts and cook further for a minute. Gently stir in the fresh cream and serve hot.
Garnish with fresh coriander leaves, you can eat with roti , naan or pori.
