Paneer Do Pyaza

Paneer do pyaza is an appealing paneer dish with luscious paneer or cottage cheese cubes cooked in a rich and creamy onion based gravy. This is vegetarian adaption of the popular non vegetarian dish, Chicken Do Pyaza..

Paneer Do Pyaza is wonderful served with the traditional meal of rice/roti, dal, and raita or as a sandwich filling.

Ingredients:

Cottage cheese (paneer) 500 grams

Onions 4 medium

Oil 4 tablespoons

Cumin seeds 1 tablespoon

Cardamoms – 4  crushed

Red Chilli Powder – 1/2 teaspoon

Chopped Tomatoes 2

Garlic paste 1 tablespoon

Ginger paste 1 tablespoon

Tomato puree 1/4 cup

Turmeric powder 1/2 teaspoon

Coriander powder 2 tablespoons

Cumin seeds 1 teaspoon

Fresh cream 1/4 cup

Garam masala powder  1 teaspoon

Fried onions 1/2 cup

Ginger, cut into juliennes 1 inch piece

Fresh coriander leaves, chopped1/4 cup

Salt to taste

Method:

Cut paneer into square pieces. Cut 2 onions. Cut further into halves and open out the layers. Sauté and toss the big onion layers till golden and take off the heat. Heat 2 tablespoons oil in a non-stick pan and add these big onion pieces to it.

Heat a deep non-stick pan and add 2 tablespoons oil. Add cumin seeds, green cardamoms and 2 sliced onions to the oil in the deep pan.

Sauté till onions turn golden. Add garlic paste and ginger paste to onions in the deep pan. Sauté and add 2 tablespoons water. Mix well. Add chopped tomatoes and tomato puree and mix well. Add turmeric powder, coriander powder, cumin powder and red chilli powder. Mix well and cook till oil separates. Add paneer pieces in it. Stir well. Cover and cook for about 10 minutes. Add cream and mix well.

Add salt and mix again. Add garam masala powder, the big browned onion pieces and ½ cup fried onions.

Sprinkle coriander leaves in it. Mix everything together lightly. Transfer to a serving dish and garnish with ginger juliennes and serve with roti, naan, paratha or rice and dal.
