Masala Egg Curry

There are so many different styles for making Egg Curry. Generally serve masala egg curry with roti or rice.


6 boiled eggs

2 boiled potatoes

2 tsps ginger paste

2 tsps garlic paste

2 tsps coriander powder

1 tsp garam masala

1 tsp sugar

1 tsp cumin powder

1/2 tsp red chilli powder

1/2 tsp turmeric powder

4 tsps vegetable Oil

3 Onions (chopped)

3 tomatoes (chopped)

2 green chilies (chopped)

2 cup water

Some coriander leaves

Salt to taste


Heat 2 tsps of the vegetable oil in a deep pan and when hot add the boiled eggs fry till slightly golden color. Then remove the eggs from the pan. Grind the onions, tomatoes, green chillies without water. Make a paste.

Add 2 tsps vegetable oil in the pan and when it is hot add the sugar till it is melt. Then add onion and tomato paste. After 3-4 minutes add the ginger and garlic pastes, and then add turmeric powder, chilli powder and cumic powder. Fry it for 2-3 minutes. Add one cup water and fry it till it is dry.

Then add the boiled egg with the masala. Add one cup of water with a medium flame for 7-10 minutes.

Add garam masala and  coriander leaves and serve it with roti or rice.
