Litti Chokha Recipe

Litti Chokha Recipe is a mainly regional recipe. It is most famous recipe in Bihar for breakfast. The recipe is now in global menu. It’s a traditional dish. It’s basically an evening snack served with chokha made out of potato, brinjal and tomato. A basic ingredient of litti is sattu. Sattu is nothing but grinded gram nut (chana). Litti-Chokha is now making its presence internationally.

Ingredients for Litti Chokha:

For Dough:

Aata (wheat flour) – 250 gm

Besan (gram flour – made from chana daal) – 100 gm

Yogurt (dahi) – 4 tablespoon

Water – 1/2 cup

Refined oil 2 tbsp

For Filling:

Garlic (chopped) – 4 cloves Ginger (chopped) – 1 tablespoon

Green chilies (chopped) – 2

Coriander leaves (chopped) – 2 tablespoon

Onion seeds (Mangrella) – 1/2 teaspoon

Carom seeds 1/2 tsp (ajwain)

Lemon juice – 2-3 teaspoon

Finely chopped coriander (dhania) 1.2 cup

Dried mango powder (amchur) 1 tsp

Stuffed red chilly pickle masala 1 tsp

Sattu (baked gram flour) – 250 gm

Salt to taste

Water

 

Method of Liti:

 

Mix all the filling ingredients with sattu. Add 1/4 cup water to make the stuffing moist and easy to fill. Keep aside.

Sieve the flour and add yoghurt, ajwain, mangaraila, salt and water. Mix lightly with finger tips with water knead it into

stiff dough. Make balls out of dough of 2.5″ to 3″ diameter in size with hand.

Divide dough into medium size loyias. Put a little sattu mixture inside and make balls. When all the littis are stuffed, Heat oil in a non-stick kadhai. Fry the litti till golden brown.

You can also bake it,pre-heat the oven to 375 F and put all the littis on a foil. Bake till one side is brown and black spots come on the litti surface. Then turn over the litti and bake for few more minutes until that side is brown as well.

Ingredients for Chokha:

Round Baigan (brinjal) – 500 gm

Tomato – 250 gm

Mustard Oil – 1 tbsp

Green Chillies – 4 (finely chopped)

Salt to Taste

Method of chokha:

Boil the tomatoes and keep aside. Half-cut the brinjal and roast on the fire from both the sides until it becomes soft. You should rotate them also to cook better. After that you can remove baigan skin. Add green chilli, garlic, salt and mustard oil.

Mix thoroughly to make chokha. Apply some pure ghee or butter on the liti and serve with chokha.

Litti – Chokha is a very popular food of north Bihar.
