Lemon Rice

Lemon rice is a good option for lunch or dinner on those days when you are very lazy and don’t feel like spending much (or any) time in the kitchen there are so many type of lemon rice, but the one which I follow is very simple and have only a few ingredients.

Serve Lemon Rice with Carrot & Beans thoran and Parippu Curry.


2 cups cooked Basmati rice (or leftover rice)

2 tbsps cooking oil

1 tsp coriander seeds

1 tsp mustard seeds

3-4 curry leaves

1 tsp Urud Dal

1 tsp Cashews or Peanuts

1 tsp Raisins (optional)

1 Green Chilli

Hing – a pinch

1/4 tsp Turmeric powder

Lemon juice – of 1 lemon

Salt to taste

1 tsp deshi ghee


Rinse and drain basmati rice. Cook in 1 1/2 cups of water. Set aside.

Heat the oil in a wide pan.

Add mustard seeds, urud dal, cashews and raisins. Allow mustard seeds to splutter and cashews to turn light golden brown. Add peas, green chilli, hing and turmeric powder. Saute for 10 seconds. Turn off the heat.

Add the lemon juice and mix well.

Add the rice, roasted coriander powder and salt to taste and mix thoroughly.

Cook on low heat till the rice gets heated through.  Add little bit desi  ghee on top and garnish with coconut and serve hot.
