Lemon And Coriander Soup

Lemon and coriander soup is a fragrant and healthy soup. It is perfect for an evening snack.

It is an unusual yet delicious; it has vitamin C and a rich soup which refresh you as its name.

Ingredients:

2 cup fresh coriander

2 teaspoon ginger garlic paste

1 lemon grass stick

1/4 cup carrots, sliced

2 tablespoon butter

1/2 cup chopped onion

1/4 cup sliced spring onion whites

2 tbsp chopped spring onion greens

2 green chili (slit)

1 teaspoon lemon juice

1 tablespoon corn flour

1 teaspoon white paper

4 cup Vegetable stock

Salt as taste

Lemon leaves for garnishing

Method:

Combine the lemon grass and chills in a pan with 6 cups of water and bring to a boil. Simmer till the water reduces to half.

Heat the oil in a pan and sauté chopped onion. Add ginger garlic paste and cook for 1 minute.

Add sliced carrot and spring onion whites and sauté for 1 to 2 minutes.

Add chopped coriander leaves in it. Add the stock, salt and pepper and bring to a boil.

Add corn flour and white paper in it. Simmer till all the carrots are tender.
