Koupes is a famous snack of Cyprus. These are readily available in most bakeries of Cyprus. Koupes are served with fresh lemon slices. Koupes are very popular in Cyprus and especially at festivals wherever they happen to be.
For the Filling:
400 gm ground meat
2 tbsp olive oil
2 medium onions very finely diced
Sea salt as taste
1 tbsp ground black pepper
1/4 tbsp cinnamon powder
1 tbsp dried oregano
1 tbsp garlic puree
2 tbsp dried mint
2-3 large fresh lemons for garnish and finishing as you eat
Mix the cracked wheat, oil and salt. Then add hot water and leave it to soak for an hour. When it has cooled, add egg, flour, cinnamon and pepper. Knead well. Mix well and knead to make a rather stiff dough.
Now prepare the filling. Heat a pan, add the mince and brown well. Add onion and stir thoroughly for 2–3 minutes. Add oregano, salt, pepper and cinnamon and cook for 2 minutes for assemble. Wet your hands. Add a golf ball size of dough into the palm of hand. Press to flatten it.
Add 1 tablespoon of filling. Fold the dough over to seal the filling inside the pie forming the pie into an oval shape. A pan fry takes place at a little lower heat. Gently put few Koupes in the oil. Fry them till golden brown.
Drain the koupes from the hot oil and place on a kitchen paper towel to drain any excess oil. Koupes are served hot and they can be eaten as a snack or as an appetizer. Sprinkle extra salt and squeeze extra drops of lemon as you eat them.
Koupes can be made vegetarian, by replacing the minced meat with mushrooms and other vegetables of choice finely chopped.
