Kheer is one of the special dessert in India. There are thousand varieties of sweet dishes are prepared in India. However out of them the one dish that remains special for every one is the traditional “kheer”.
It is also called Payasam in Southern India or INDIAN RICE PUDDING.
4-5 cups whole milk
1 cup condensed milk
2-3 cardamom seeds (crushed)
1/4th cup basmati rice (washed and drained)
1 pinch of saffron threads, soaked in a little hot milk
2 tbsp almonds (blanched silvered)
1 tbsp skinned pistachio nuts (chopped)
1 tbsp raisins (optional)
2-3 tbsp sugar or as desired
How to prepare ?
Boil the rice in the milk on a medium flame until the rice is cooked. Make sure you stir frequently; otherwise your milk may burn at the bottom of the vessel. Add the condensed milk, sugar Stir till the sugar dissolves and the mixture thickens. Add the cardamom and, raisins, and nuts. Give your Kheer a flavor sprinkling soaked saffron over it. It will give a nice color.
You can serve Kheer either piping hot or cold. Cold Kheer tastes divine with shavings of almonds and pistachios. If you are counting the calories, you can replace milk with a non-dairy product. Use sugar-free supplements instead of sugar and you have an instant low-cal dessert.
