Barfi is made from condensed milk, cooked with sugar until it solidifies. There are many varieties of barfi include besan barfi, kaaju barfi, khazur burfi and pista barfi etc.
1 kg khajur deseeded
1 tin condensed milk
250 gms mixed dry fruits (pista, badam, cashew)
1/2 cup dessicated dry coconut
2 tbsp Maida
2 tbsp Ghee
Take the khazur and break upthem coarsely. Heat the non-stick pan. Then add the ghee. After heat the ghee add the condensed milk and the mixed dry fruits. Mix them very well. Cook them on a slow flame. Stirring the mixture continuously till it becomes thick and starts leaving the sides of the pan.
Then remove the pan from the fire. Spread the desiccated dry coconut on a butter paper sheet. Grease your hands with ghee, take a chunk of mixture and roll it on the butter paper sheet into a thick roll, to cover all the coconut spread on the sheet. Chill the rolls in the refrigerator. Then cut them into squares. You can give them various shapes that you want.
