Kadai Chicken is a very famous restaurant delight. In this recipe Chicken cooked in tomato puree and cashew nut paste.
Kadai Chicken is a spicy chicken dish that is a gravy recipe with a rich aroma given by the Ginger and Cashew nut paste.
Chicken, Cut into 12 pieces on the bone 500gm
Finely chopped onions – 50gm
Turmeric powder – 1 pinch
Cinnamon stick – 1 inch
Cloves – 4 or 5
Coriander seeds 2 teaspoons
Cumin seeds 2 teaspoons
Black peppercorns 10-12
Dried red chilies 5
Ginger-garlic paste 2 tablespoons
Green chilies 2
Finely chopped coriander leaves – 2 tbsp
Cashew nut paste 2 tablespoon
Salt as taste
Heat oil in a kadai. Sauté chopped onions. Heat another pan. Add coriander seeds, cumin seeds, black peppercorns, Cinnamon, Cloves & bay leaves. Dry roast for 1 minute.
Add dried red chilies and roast till fragrant. Cool and powder coarsely.
Make tomatoes puree in a blender. When onions are lightly browned add ginger-garlic paste in it, Add chopped green chili
Add powdered spices, turmeric powder and Sauté for 1 minute. Add pureed tomatoes and mix well. cook for 2 minute.
Add chicken and mix well. Add salt, cashewnut paste and ½ cup water and mix well. Cover the lead and let it cook for some time.
When it begins to boil, reduce heat and cook for about 15 minutes or till the chicken is done. Turn off heat and let it stand for 5 minutes.
Garnish with chopped coriander leaves and ginger Julian. Serve with roti, naan, puri or steamed rice.
Tips: If you want it little gravy, add some more water.
