Gobi Paratha is one of the most popular unleavened flat-breads in Indian cuisine. Gobi has been combined with a cooked onion masala and used as a stuffing for a Parathas.
You can serve it as a healthy snack in breakfast or in dinner. Gobi Ka Paratha is mouthwatering flat bread, stuffed with grated cauliflower & spices.
It makes a quick breakfast and is best enjoyed with pickle or curd.
1 1/2 cups whole wheat flour
1 tsp oil
Salt to taste
Water – as required
Minced cauliflower 1 cup
Cumin seed 1/2 teaspoon
Chopped onions 1/2 cup
Finely chopped coriander leaves 2 tablespoon
1/2 cup deshi ghee
1/2 cup butter
Salt to taste1
Combine flour, 1 teaspoon oil, salt and knead into soft, smooth dough using enough water. Cover it with a damp cloth and rest it 1 hour.
Heat oil in a non-stick pan on medium heat and add the cumin seeds. Then add chopped onions and green chopped chili. Sauté again for 30 seconds.
Mix grated cauliflower and coriander leaves in it. Add salt and cook for a few seconds. Now divide the dough in equal portions.
Roll out one portion of the dough into a circle of 75 mm. (3″) diameter using whole wheat flour for rolling. Put the gobi stuffing in the centre of the circle and close it.
Now slowly roll it in a size of chapatti, place it on a hot griddle, and cook using a little ghee, until both sides are golden brown. Repeat this process for remaining parathas.
Place one tablespoon butter on top and Serve hot with pickle, green chutney or curd.
