1/4 cup lemon juice
2 tablespoons extra-virgin olive oil
1/2 tablespoon chopped garlic (fresh)
1 pinch sea salt (taste)
1 pinch crushed red pepper
1/2 teaspoon fresh parsley leaves (finely chopped)
1/2 teaspoon mint leaves (finely chopped fresh)
1/2 tablespoon creamed honey
Parsley spring and lemon wedge (for garnish)
Whisk olive oil, chopped garlic, lemon juice, parsley, mint leaves, red pepper, honey, salt and Toss with shrimp in a large bowl
Marinate for 20 minutes in the refrigerator. Preheat an outdoor grill for medium-high heat. Lightly oil grill grate, and place about 4 inches from heat source.
Grill on high heat for 5-6 minutes turning to char all sides. Serve with garnished lemon wedges and parsley springs.
