Gajar Ka Halwa is famous India sweet dissert. This is a delicious, rich pudding loaded with nuts and dried fruits are well-known all over the world. It is a heavy calorie sweet desert. You can use sugarsubsicute if you are avoiding sugar. Normally it eaten warm.
Skimmed milk 2 cups
Sugar – 250g
Cardamom powder 1 teaspoon
Deshi Ghee 2 to3 tablespoon
Raisins 2 tablespoons
Pistachios 2 tablespoons
Cashew nuts 2 tablespoons
Saffron – few flakes (optional)
Roast the cashew nuts and set aside for the garnish. Boil the milk on medium-high heat in a pan and reduced to about to 1 cup. Add ghee in the frying pan, Put the grated carrots in the pan. Stir-fry for about 10 minutes. Add the milk and cook until the milk dries. Add saffron in it.
Add the sugar, mix well and sauté till the ghee leaves the bottom of the pan. Add half of khoya in it. Add the cardamom powder. Stir halwa until the khoya mix well. Garnish it with grated khoya, dry fruits and serve warm.
You can make it in microwave also.
