Eggless Muffins

Eggless Muffin is a great breakfast or snack. If you are in dieting and have diabetes it is healthy snack for you. Instead of using all-purpose flour for the whole muffin, I have substituted whole wheat and sugar free netura.

Ingredients:

1/4 cup All Purpose floureggless muffins1
1 cup Whole wheat flour
1 teaspoon baking powder
1 pinch salt
1 pinch nutmeg
4 tablespoon sugar free netura
2/3 cup milk
Zest of 1 Orange or lemon
1 large ripe banana, pureed
1/2 cup mixed chopped walnuts and rolled oats for topping

Method:

Sieve the flours and mix together. Add salt, baking powder, nutmeg and sugar free. mix well. In a separate bowl, mix milk and orange zest. Then mix the dry in the wet and then stir in the pureed banana.

Stir softly until well incorporated. Spoon this mixture until 3/4th full and top it off with the oat-nut mixture in the muffin pan. Bake for 15-20 minutes in a preheated 400°F oven. To taste your muffins are done are not , press a toothpick in the middle of muffins.

If toothpick comes out clean, that your muffins are done. Cool the pan on a cooling rack for about 5 minutes. Then remove the muffins out of the pan and serve immediately or cool completely to store it.
