Creamy Spinach is a classic side dish to a thick, juicy steak. It is fast and easy to make.
1 pound fresh spinach, about 2 large bunches
1 stick Butter
8 tbsp Flour
1 whole Medium Onion, Finely chopped
3 cloves garlic, minced
2 cups milk
1 pinch ground nutmeg
3 tbsp butter
Salt and pepper as taste
Wash the spinach thoroughly using 2 or 3 changes of water, but don’t dry the leaves. Melt butter in a pan. Add the onion, minced garlic and cook for 5 minutes until softened. Add flour and stir continuously. Now slowly add milk. Whisk the milk. When it has all been incorporated, gently cook for 5 minutes until the sauce has thickened. Almost resembles as white gravy. Add salt and finely ground black pepper. You can also add a couple of pinches of ground nutmeg.
To cook spinach, melt 3 tbsp butter in a separate pot. Add spinach in increments until all incorporated, and cook until wilted but not soggy, about 4 to 5 minutes. Do not over cook the spinach.
Now add the spinach into the cream sauce. Stir it gently; slowly mix the spinach and cream sauce. Serve with fresh bread.
If you are in diet you can use nonfat yogurt instead of butter.
