Coconut Basmati Rice

This rice is delicious with Chicken Tikka Masala. Basmati rice is simmered in coconut milk, instead of water, giving it a rich flavor.

The coconut milk makes this rice a much richer. Coconut rice isn’t really that much different than normal rice.

Ingredients:

5 Cups of Basmati Rice

1 Cup of Coconut Milk

1 teaspoon salt

1/2 teaspoon cinnamon and cardamom powder

2 teaspoons ghee or butter

1/2 cup cashew nuts

2 tablespoon sweetened coconut flakes

for garnish

Water to top off Rice Cooker

Method:

Rinse and drain the rice and sieve until the water runs clear. Heat the ghee in a Cooker over medium-high heat. When it’s hot add rice and cook, stirring often, till its color changes. Add the cashews and cook.

Add cinnamon and cardamom powder in it. Add salt and stir it for few minutes. Add coconut milk and water in rice and reduce the heat, cover and cook for about 15 to 20 minutes.

After one whistle take off the heat and allow rice to rest for 10 minutes. Transfer rice to a serving plate and garnish with sweetened coconut flakes.
