Cinnamon and Caramel Rice

Cinnamon and Caramel Rice is a delicious dessert, full of caramel and sweet flavor.

Cinnamon and Caramel Rice (Kanika) which is traditionally a spiced sweet pulao that

is offered to the Lord and this one is a caramel version of it.


Basmati Rice: 1/2 cup

Water: 1 cup + as needed to cook the rice

Clarified Butter/ Deshi Ghee: 2 tbsp

Sugar: 1-2 tsp (for caramelizing)

Sugar: 5 tablespoon or as taste

Cloves, Cardamom powder: 1 teaspoon

Cinnamon powder: 1 teaspoon

Cashews/Raisins: handful

Sliced coconut 2 tablespoon

Pinch of salt

Grated coconut for garnishing


Heat ghee in a cooker and add in around 2 tsp or more as needed to get a deep brown color) of

sugar and let it caramelize an turn to a rich brown syrup. Fry Cashews and Raisins till brown.

Wash the rice 2 times in water. let it dry little bit.

Add cinnamon powder, Cloves, Cardamom powder stir fry till a nice aroma emanates for another minute or so.

Add the washed rice and mix well till the rice gets coated with the syrup for another 1-2 minutes.

Add pinch of salt, coconut  and sugar in it. Then add rice dobble water in the cooker. Reduce to simmer, cover and let it cook till almost done.

After 3 city off the gas. Serve in dessert bowls garnished with more nuts or dried rose petals or grated coconut.

Delectable sweet rice and   taste the original traditional dish.
