Chocolate Hazelnut Mousse is Crunchy, creamy and rich in flavor. This is the best dessert with the special touch of hazelnuts for party fare. If hazelnuts are not available you can use walnuts instead, I love chocolate and it is so quick and easy to make.
For The Hazelnut Praline
1/2 cup coarsely chopped hazelnut
1/4 cup castor sugar
1 cup chopped dark chocolate
1/4 cup milk
3/4 cup chocolate hazelnut spread
2 /3 drops of vanilla essence
1 tbsp powdered sugar
1 1/2 cups beaten whipped cream
Additional whipped cream
Additional toasted hazelnuts for garnishing
Preheat oven to 180°C. Tost the hazelnutsin a frying pan. Rub the hazelnuts in a clean tea towel to remove skin. Cool and chop roughly. Melt the sugar in non-stick pan on a medium flame till it turns light brown in colour.
Pour the prepared mixture on the greased rolling board or butter paper and roll it with greased rolling pin so as to get a thin layer. Once set, crush the praline coarsely with a rolling pin and keep aside.
Place the chocolate in a medium heatproof bowl or top of a double saucepan. Place over a saucepan of simmering water (make sure the bowl doesn’t touch the water). Use a metal spoon to stir for 5 minutes or until the chocolate melts and is smooth.
Mix milk in he melted chocolate, mix well until no lumps remain. Add the chocolate hazelnut spread and vanilla essence and mix well. Mix the sugar and beaten whipped cream and fold gently.
Add hazelnut praline and fold gently. Pour equal quantities of the mixture into glasses. Refrigerate for at least 3 to 4 hours or till the mousse sets.
Garnish with beaten whipped cream and a chocolate byte and serve chilled.
Tips: You can also use milk chocolate instead of dark chocolate. Walnuts can use in the replace of hazelnuts.
