3 large eggs
1 tablespoon whipping cream or milk
2 tbsp. butter
Salt as taste
Black pepper as taste
1/4 cup greated cheese
1/4 cup finely chopped scallions
In a mixing bowl beat the eggs with the salt and pepper until frothy, using a large fork or whisk. beat in the milk, scallions, cilantro until well blended. Taste for seasoning.
Heat butter in a pan over medium-high heat until butter is hot and sizzling.
Pour egg batter into pan. While rapidly sliding pan back and forth over heat, quickly stir eggs with a fork to spread them continuously over the bottom of the pan as they thicken. Cook until lightly brown bottom of omelet.
Cook the opposite side of the omelet for 1 minute. Sprinkle 1/4 cup of the shredded cheese of your choice into the center of the omelet. Fold the omelet in half and allow the cheese to melt for another 30 seconds. Slide the omelet out of the pan and onto a plate.
Garnish it with cilantro and tomato sliced.
