Carrot & Beans Curry

This is a very simple low fat, stir fry recipe which is very healthy, simple and also looks colorful.

Ingredients:

Carrots, peeled – 4 large

French beans – 250 gms

Tomato chopped 1

Onion chopped – 1

Green Chilli halved – 1

Turmeric powder – 1/2 tsp

Salt – As taste

Mustard seeds – 1 tsp

Curry leaves – A few

Coconut (grated) – 2 tbsp

Broken Urad dal – 1/2 tsp

Red dry chillies – 2 broken into pieces

Hing/Asafoetida – 1/4 tsp

Oil 2 Tbs

Method:

String the beans (French beans), wash and cut it into small pieces.

Wash, peel the skin and chop the carrots.

Heat 2 tbs of oil and add put seasoning with oil, urad daal, mustard and jeera.

Once mustard splutters add hing, green chillies, curry leaves, onions, fry for 2 minutes.

(If you like very spicy, then red chilli)

Add tomatoes, cook further 2 minutes.

Add beans and carrot cubes. Add turmeric and salt to this and mix thoroughly.

Now close this and let it cook in a very slow flame. Once the vegetable gets tender add coconut.

Simmer the flame and let it cook for 1 more minute. (If you find any water open the lid and leave it on the high flame for 1/2 minute)

Serve with Rice or with Roti. It is one of South Indian Recipe. You can try it on Onam.
