Bobotie, is a South African dish consisting of spiced minced meat baked with an egg-based topping. There are as many variations for bobotie as there are cooks.
Traditionally this dish is served with yellow rice and sweet banana slices.
Minced lamb 750 gm
White bread 2 slices
Chopped onions 2
Crushed garlic cloves 2
Ground turmeric 1 teaspoon
Milk 60 ml (1/4 cup)
Finely grated rind and juice of 1/2 small lemon
Raisins 1/2 cup
Toasted slivered almonds 2 tbsp
Bay leaves 6
Salt as taste
Worcestershire sauce 15 ml
Peach chutney 25 ml (or apricot)
Apricot jams 15 ml (smooth)
Preheat oven to 180C.soak bread in water and keep aside. Soak bread in milk. Heat the oil in a large skillet over medium-high heat. Cook the onions in the hot oil until soft.
Add curry powder, slat, chutney, Worcester sauce, jam, turmeric and vinegar. Mix well. Squeeze the excess milk from the bread. Set the milk aside.
Add bread, raisins, meat, almonds and mix well. Cook over low heat until meat looses its pinkness. Remove from heat and add 1 well beaten egg.
Mix well. Pour the mixture into the prepared baking dish. Beat remaining 2 eggs into the reserve milk; add turmeric and salt mix well. Pour over meat mixture and place bay leaf on the top.
Bake in the preheated oven for 1 hour. Serve with yellow rice, banana, coconut & chutney.
