For the pancakes:
100g plain flour
1 medium egg, beaten
300ml skimmed milk
1/2 tsp baking powder
1/4 tsp baking soda
Pinch of salt
For the topping:
1/2 cup mashed bananas
1/4 cup honey
In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
Whisk in skimmed milk, egg until batter is well combined and free of lumps.
Use kitchen paper dipped in oil to lightly oil a 20cm heavy-based non-stick frying pan.
Add just enough batter to thinly coat the pan’s base and cook over a moderate heat for about 1 minute,
Until golden brown. Turn over and cook the other side until golden brown.
Transfer to a warm plate and cover with a square of greaseproof paper. Repeat with the remaining batter to make all pancakes.
Pour the honey over the rum-soaked bananas and cook gently, stirring occasionally, for 4-5 minutes, until, the bananas have softened slightly and are caramelized.
Place the bananas and honey on top. Dust with icing sugar and serve as break fast
