Almond And Broccoli Soup

Broccoli and almond soup is one of simple and healthy soup recipes. Almonds are toasted to bring out its complete flavor and to add crunch too.

Besides being a protein-filled nut, it is also considered brain-friendly – hence, you can build your body as well as nourish your brain with this tasty soup.

This winter, soak in rich almonds of a healthy, green broccoli soup.


1/2 cup broccoli stalks

2 cups broccoli florets

1/4 cup chopped onions

1/ cup finely chopped celery

1 tsp finely chopped garlic

1/2 tsp corn flour dissolved in 1 cup milk

1 tablespoon butter substitute

3 cups almond milk

3 tbsp almond slivers, toasted

Salt and paper as taste


Combine the broccoli stalks with 2½ cups of almond milk in a deep non-stick pan and cook on a medium flame for 5 minutes.

Add chopped broccoli, celery, almonds and Continue to cook for a further 6-8 minutes. Add a little salt and cook till the broccoli is soft. Puree the mixture coarsely. Transfer to a pan and bring to boil.

Add the corn flour and milk mixture, salt, pepper. Mix well and simmer for another 2 to 3 minutes or till it thickens, while stirring continuously.

Serve, spoon the soup into bowls or mugs and top with the remaining toasted almonds and/or a little partly whipped double cream.

It is rich in taste but wondrously low in calories, and so good for you! For the almond milk, I use the Almond Breeze brand, and the butter substitute is Smart Balance.
